Elizabeth David includes a full chapter on Crumpets and Muffins
with a number of old recipes in her classic volume English Bread
and Yeast Cookery. English muffins here in America really did
get much of their start due to Mr. Samuel Thomas who emigrated
here from England in 1875 and began making muffins based on
his mother's recipe in 1880. Yes, you should be remembering the
television commercials. (For those of you who live elsewhere, the
Thomas brand of English muffins has run a series of ads where
Mr. Thomas has left for America and taken his muffins with him.)
