Okay, one of the Portugese on the list have to step up on this one:-)  Bacalao can both mean fresh _and_ salted cod. Since cod is not native to Portugal it is most often found there in it's dried, salted form.  (I have some in the freezer now!)  When I was a child my mother used to make a wonderful tomato-y fish stew with bacalao and potatoes in a terra cotta pot that went into the oven.  Quite frankly, I have never had a stew its equal.
