[Sca-cooks] What class would you teach/take?

I like the idea that several respondants have given for a class in
humors.  That would be great!

I also like the ideas about table settings, service and manners.  That
knowledge would help us serve feasts that not only are comprised of
period dishes, but would be served, etc., the way they were in period.

I would like to see classes on non-European cooking, service, etc.
