With regard to 15th century Florence
and the Medici's, you might want to bookmark
and investigate the following:

It's from the Medici Archive Project.
Their section on "FOOD AND WINE" focuses on social and
 cultural behavior as well as the specifics of food
 acquisition, preparation and presentation. This
 includes: descriptions of meals (including table
 decoration and service); specific dishes and notable
 ingredients, etc.

The archives date from the 1500's. I can't tell exactly
what 15th century material is included.
