[Sca-cooks] OOP: Frying pan opinions? Try period ceramic pan.

I know that you are asking about modern pans.  I
personally don't use anything fancy for my modern
pancakes, but an aluminum square pancake griddle with
teflon coating.  My pancakes always come out
perfectly.
Since I have recently started camping at wars, I have
recently purchased a cast iron griddle for my propane
burners.  I am still perfecting my technique with
this, as it does have hot and cold spots.

However, if you want to make pancakes using a period
pan, there is a 1560 painting by Joachim Beuchelaer
showing a woman making pancakes using a ceramic [yes,
Olga, ceramic!] pan.  The pan is placed on a black
metal ring, which is suspended by three chains
attached to a metal swing arm, which has been attached
to the brick fireplace.  From what the painting shows,
you fill the bottom of the pan with batter, swing the
pan over the fire to cook, swing it back out to flip
and again back over the fire until done.
Unfortunately, I haven't found a website with this
particular painting, but it have been published in
several books, most notibly, Katie Stewart's "Joy of
Eating".
