The first source that comes to mind is Bartolomeo Scappi's "Opera" ("works") published in Venice around 1570.  I have a cookbook with several recipes excerpted from this; I don't know whether there is an English translation available.  This is the book I really, really want to get, but alas I've had no luck finding it!  The one copy that was accessible to me - a facsimile of the 1634 printing, in Italian - was at my school library, and it's gone missing.  (Someone please explain to me how one of the most prestigious university library systems in the country loses its rare books??  They couldn't find the Platina manuscript for me either!  Hmph.)  At any rate, that should be a good resource, if any good gentles on this list can suggest to either of us where to find a copy of it :-)

Good luck!  And please let me know if you find anything cool, 'cause I'm looking for information too :-)  (My period is 1580's, and though a Florentine, I will be happy with sources from anywhere in Italy!)
