Here is one source for the Scappi
that might be available.
Bartolomeo Scappi's work is excerpted in
the two volume ARTE DELLA CUCINA. Libri di
ricette testi sopra lo scalco il trinciante
e i vini. (in Italian of course)
They were edited by Emilio Faccioli.
Milan: Edizioni il Polifilo, 1966.
The OCLC number is 1183102.
The set also includes a number of other
works including the Martino manuscript.
It's reported that 35 libraries in the US
own the set. It turns up for sale in the
used book market occassionally.
My set cost 88 dollars and was ordered from Italy.

The first source that comes to mind is Bartolomeo
Scappi's "Opera" ("works") published in Venice
around 1570. They couldn't find the Platina
manuscript for me either! Hmph....
if any good gentles on this list can suggest
to either of us where to find a copy of it :-)
