If they're anything like parsnips in nature they ought to keep for a while
in the fridge, at least a week or so until you can get to them. Maybe
throw one in the freezer, securely wrapped, for a day or two, then defrost
it?

They're probably South Botswanan giant radishes, anyway. ;-)
