I suspect not, as one of the current wisdoms as far as cutting boards and
safety is using wooden cutting boards and bleaching occasionally.

Soaking polyurethaned wood in bleach solution will cause clouding of the
polyurethane coating, but it doesn't hurt the piece intrinsically.

Other odor fighting measures to try would include baking soda solution as
well as lemon or vinegar -- don't use them both at the same time, though,
as you get a modified volcano effect!
