Mine is Mountain Mushrooms, which is in "The Medieval Kitchen" and comes
from one of the C15th Italian cookery collections:
(translation) Mountain mushrooms. Take mountain mushroom and boil them; and
discard the water; then fry them with finely sliced onion, or with white of
leek, spices [I use powder forte with lots of long pepper], and salt, and
serve.
Delicious and easy. I've even converted a couple of fungus-haters with it.
