Saunders, aka Red Sanders, aka Red Sandalwood (Pterocarpus
santalinus) is, in fact, NOT any kind of sandalwood, despite its
name. True Sandalwood, which i have seen called White Sandalwood and
Yellow Sandalwood (Santalum album).

I have used Red Sanders in Apple Mus - added an interesting color...
It has, i think, a very faint pleasant woody flavor/scent. But it
really doesn't affect the flavor of a dish, unless you dump mass
quantities into your dish.

Anahita
who is resting at home and driving to the event in the very early AM
with the last of the feast dishes...
