diced potato, dieced westphalian or prosciutto or some other dried ham in
matching dice. saute until potatos are cooked in goose fat, season with
pepper.

Get another pair of geese, cook another and save all of the fat, and confit
breast meat, wings and legs of the third in all of the resulting fat?

i got over four CUPS of goose fat from it.. anyone have any ideas of what to
use it in??
