Greetings,

Our area's resident Italian cook is fra Niccolo, and he is kind enough to

A goodly portion of them are Italian, you might want to check them out.

As far as having limited prep and cooking space, I have had good luck with
pre-making ravioli and freezing them. If anyone in your area has a pot for
shrimp boiling (now frequently sold as a turkey fryer) it is fairly easy to
bring a large amount of water to a boil for cooking said raviolis.
