Sorry, just saw your original post explaining why no bacon fat. I suppose I can understand the substitution of olive oil then... just promise me you will note it in your redactions, so people don't actually think that Janete of Hens is like that. ;)  Its just not the same without the bacony bits... mmmmm <drifts off into remembering how tasty that dish is>

Catalan cooking is certainly tasty but you would be kind of stuffed if you didn't like mutton, sheeps cheese and bacon. I can strongly recommend the Cebollada if anyone is looking to make a pottage that will harden your arteries and send you to heaven.
