[Sca-cooks] gas vs. electric ovens and ranges

For most purposes, there isn't much difference between gas and electric
ovens.  Both are heated up cooled down and depend on a thermocouple to
maintain the the heat at a given temperature.  The difference in speed of
heating is negligible.

The stove top is a different matter.  Gas gives you fast direct heat on the
bottom of the pan and fast cool down.  Electric takes time to come to
temperature and time to cool down.  I find with electric, I need some space
to set the hot pans off the coils and it takes a little longer to come to
temperature.

I've swapped back and forth between gas and electric for 40 years and find
little difference between the two as long as the equipment is in good repair
and properly maintained.
