Well, depending on how observant you are, Avraham,
leftover roast beef does well in a stroganoff mixture.
Just dice the roast beef, and cook the other
ingredients first, putting the roast beef in at the
end to warm through. Another recipe which will use
leftover roast beef well, is shepherds pie- it will
also use up cooked vegetables.

Phlip's Shepherd Pie

Cooked meat, diced

Mixed cooked veggies- or a frozen commercial mix like
succotash, or green beans, corn, broccoli, carrots,
even rice, whatever you have that comes in small
pieces

Chopped canned tomatoes

Garlic and /or chopped onions, if appropriate to your
mix

Chopped hot peppers (optional)

Salt and pepper to taste

Mashed potatoes

Mix all ingredients except the potatoes in a
casserole, and flatten in bottom. Make mashed potatoes
a little extra thin, but not much, and spread across
the top of the meat and veggie mix, like a top pie
crust- about 3/4 to 1 inch thick. Sprinkle with a bit
of paprika for color, and heat in 350 oven about 1/2
hour, or until heated through. Serve and dish up like
a deep dish pie.

Definitely a nice supper for a cold winter's day ;-)
