Thanks Olwen.  My mundane specialty is Pastry.  I
actually do a lot of breads as well.  And I moved to
Las Vegas to gamble <giggle> actually two of the top
ten pastry chefs in the nation are here, and there is
a lot more scratch or more from scratch (as opposed to
take it out of the freezer and make a sauce pattern on
the plate) baking here.  Not that I would know at the
moment as I am officially a victim of the "economic
downturn" after September 11th.  However it's picking
up and I've got some more interviews again this week.
