According to Esther Aresty, the recipe for
what she terms as "an adaptation of his
Pears Flambees."  supposively comes from the 1697
Massialot work Nouvelle Instructions...
As Aresty fails to include the original, it's
rather hard to judge what she means as "an
adaptation of his Pears Flambees." One has to
pay close attention because Aresty tends to
ramble on about this or that term or food, then
mention a date and then throw in a recipe from
another era all within a couple of paragraphs.
She was an absolutely terrific book collector and her
library of cookbooks is detailed at:

I can forgive the fact that she muddled things up
when she wrote about her books and recipes back in
1964 when food history and cookery books were nice
conversational subjects suitable for the ladies club
luncheon. Her collection of cookbooks spanned five
centuries and represented most of the world's cultures.
The fact that it included 576 book and 13 manuscript
titles and was donated to the University of Pennsylvania
Library should not be overlooked when we write about
how horrible her work was or what a terrible source
The Delectable Past is. Her collection will at least benefit
future generations of researchers.
