There is no need to compile food handling guidelines from scratch. They
are already available on line.
A friend of mine downloaded such info from (I believe) the FDA website.
I think it printed out to about 40 pages. I thought it was mostly common
sense, but I've worked in well-run restaraunts. She put out copies on
the chatelaine's table at a kingdom event and they were the first to go.
