Now, that actually works with my Theory of Japanese Cookery.  These "heretical"
American sushi ingredients, like the "California Roll" with avocado, fall under
the Japanese aesthetic of using the best and freshest ingredients which are
harvested in each specific area.  Use of crawfish makes perfectly good sense.

As long as Japanese cooks don't confuse Okra with Okara.
Okara, the ground soybean lees left after the extraction of soy milk for tofu,
has many uses, mainly as a fiber source and meat substitute.
