Most of the descriptions I've seen of feasts in Ireland seem to
center around roast meats.

There's a web page which describes a plausible 12th century Irish-
Norman feast.  It's based on period accounts of Irish, Norse, and
Norman foods.  It was done by Mistress Hauviette, of this list.  No
lamb stew mentioned, I'm afraid.

This is a good example of how recent many "old, traditional dishes"
really are.
