I guess my typing wasn't clear....I didn't mean that the Icelandic
Chicken, specifically, was dependent on local markets, etc., but that
these standard dishes (served, not served, never heard of, etc.) as a
_group_ might be more locale-dependent.  A food version of inter-kingdom
anthropology, so-to-speak.  For instance, you guys on the two coasts, or
those who live in more urban areas (like Gorgeous) can get some things
like fresh fishes more easily and cheaply than can us inland, more rural
types.
