: why?  I used to have a ranch... we butchered a pig about once
every other month...
no freezer... we smoked the meat.. made sausage, fresh... and
smoked the rest..
fresh piggie, was on the menu on a regualr basis...
as was venison in or out of hunting season.
it was the vegies that were seasonal...
