Brighid, you don't need to freeze the peachpits.  Just make them and stick
them in an airtight container.  They will be good for a month or so.  Just
watch, no matter what you do to them, the colour will change and fade just a
bit.  I may suggest that you be prepared to lightly dab them with a
paintbrush dipped in sauder,cinnimon or clove mix just before serving to
bring back some texture look.
