The main ingredient is maltitol, and there are a couple of other -tols, and
there is Acesulfame K. For whatever reasons of processing, it doesn't affect
me like maltitol normally does (slavery to porcelain bathroom fixtures), and
it doesn't give me the headaches that Nutrasweet usually does. Not that I
use huge amounts of it, but when I do use whatever is called for in a recipe
(like 1 cup in a batch of cookies), it doesn't seem to have any negative
effects, and it does taste like real brown sugar, which was the original
hoped-for effect. (I haven't tried the white yet, because Splenda is so much
cheaper).
