Anthimus is early 6th Century, as he is writing to Theodoric, King of the
Ostrogoths.

Libellus de arte coquinaria is from the late 12th or early 13th Century, but
the codices are copies from the 14th Century.

The Regimen sanitatus Salerni is 12th or 13th Century.  You can find an
English translation from 1535 here:

De flora dietarium ( text on humoral theory and food) is early 13th Century.
