[Sca-cooks] Sabatier knives

I just received the set of Sabatier "Precision" knives ordered from
Amazon (now selling there for $29).  They seem to be almost (but not
quite) up to the quality of my set of Henkels.  Now I just need to
decide if I'm going to use them for feasts and keep the Henkels for
home, or do things the other way around.

Either way, the Henkels are well-worn and in need of sharpening - any
one have tips on how to do this/have this done?
