Well, the first feast i Head Cooked, my helpers had all worked at the
same feast the previous year, under a different Head Cook. They were
all college students with a minimum of period and feast cooking,
mostly under that other Head Cook. (they were good workers, cheerful,
willing to work, willing to learn, and intelligent enough to apply
their knowledge of mundane cooking - one saved me when i didn't have
enough frozen pie shells - she made enough pie crust to make what i
had stretch to cover the whole pears in crust). They told me that as
Head Cook i wasn't supposed to do anything but supervise.

That would have been impossible! There's no way i could be in a
kitchen and just watch and command. I gotta be doing stuff. It would
just be wrong not to.

I'm a *cook*, and as Head Cook i'm responsible for the whole kitchen,
not just the food. So if there's washing up to do and everyone else
had gone home, well, there i am...
