as to the "bacon wasnt in the recipe" i have seen early American recipes
that say "lard or fat bacon"  yes, i know that is out of period, but i
cannot imagine it is an uncommon substitution!
so while it may not be exactly what is called for in the recipe, it is
certainly well within period, and customary changes to a recipe.
