Lumbard Mustard. XX.VII. V. Take Mustard seed and waishe it & drye it
in an ovene, grynde it drye. farse it thurgh a farse. clarifie hony

whan [th]ou wilt spende [th]erof make it tnynne with wyne.

Honey Mustard Barbecue Sauce
1/3 cup Dijon mustard
1/3 cup dark honey
1/4 cup vegetable oil
2 tablespoons whole-grain or stone-ground mustard
2 tablespoon minced green onion (optional)
fresh cracked black pepper
Combine mustards in a bowl and mix well. Add other ingredients and
continue mixing until smooth.
It seems close enough. Leave out the oil and pepper. Add a bit of
wine. One of the other sauces on the same page called for lemon juice.
Most of them called for either molasses or brown sugar instead of the
honey.
Going to have to do some Medieval Carolina BBQ tonight.
