[Sca-cooks] Mustards

I'd like to try some other fruit mustards.  Does anyone have any recipes or
thoughts before I go wildly experimenting on:

Fig Mustard
Plum Mustard (or maybe prune mustard would be better)
Cherry Mustard
An Orange Marmelade sort of mustard
Olive mustard

While the museum itself has 1000's of mustards, the catalog has 100s of
different ones available.
They have an interesting sense of humor and among other things, have
entitled their Mustard University as:
