Wasn't my idea...learned it from Amish/Mennonite women.  We had a 
wringer washer then, but I have since done it in a regular modern 
electric top-loader.  Works great, doesn't bruise the meat.  When you 
are butchering more than a few birds, it really saves a lot of time. 
 Afterwords, just run a cycle of soap and bleach to clean any residual 
blood/juice from the inside.
