[Sca-cooks] Venison stock?

My husband is currently in the process of boning out a venison roast 
(possibly shoulder; the packaging just says "roast") to make some venison chili.  It 
looks like there's going to be a nice meaty bone left, and I was wondering a) 
if one can make stock from venison, b) the suggested method for doing so, and 
c) what one might eventually use the said stock for.
