One can start with Hugo Stopp's foreword and
introduction to Das Kochbuch der Sabina Welserin.
I have the hardbound 1980 edition that was published
in Heidelberg. I paid twenty pounds sterling for it as I ordered
my copy through Britain the year it came out.

A longer version is:
Freund, Sabine.

Welserin aus dem Jahre 1553 : ein Beitrag zur Graphematik handschriftlicher
Überlieferung des 16. Jahrhunderts / Sabine Freund.

Hope this helps.
