[Sca-cooks] Info on holding cabinets and portable hotboxes?

In this case "almost no kitchen" is one iffy stove, a small sink and a
small stretch of countertop.  The last time I cooked at this site they
lost the kitchen an hour before the start of feast due to a booking
error.

I've got one roaster, can probably borrow a couple more, and will very
likely be buying and additional one or two (those things are incredibly
useful).  The last time I priced them at Wal-mart they were around $50.
  I'll have to keep my eyes open for sales.

The last time I checked into renting a holding cabinet the cost was
pretty hefty and would have chewed up a good chunk of the feast budget.
  I'm not willing to spend my own money on equipment rental, but I am
willing to invest in some serious equipment that I'll get a good amount
of use out of.
