[Sca-cooks] Dayboard portions

What guidelines are there for determining portions of meat, bread,
fruit, etc. for a dayboard? I am in charge of a dayboard to feed 500,
in March. I am particularly interested in knowing how much bread
is likely to be needed, since I'm planning to bake at least some of
it.
Yes, Stefan, I checked the Florilegium file, but didn't find this
question answered.
