In this case, I got curious about the heat activated second rise a while
back and went on a fishing expedition, which yielded some basic marketing
strategy as well as ingredient information. I haven't figured out the
baking chemistry of the sodium aluminum sulfate yet. In the process of
digging, I found a bunch of interesting tidbits. Over the next few years,
I'll do some test baking to give me a better feel for how and when to use
specific chemical leavens.
