If you can't find quince whole, why not use quince paste for the base sauce
and toss in some either pears or dried apricots?  It would infuse the flavor
of the quince and if the pears are tastless enough they would pick up the
flavor of the quince, or if you used dried apricots, you could soak them in
some white wine with quince paste simmered into it first.
Just a random thought.
Olwen who would make a couple of lovely faux quince for garnish if you so
desire.
