Although I don't have it grouped by time period or culture, some of the

of use to you:

While you may be able to find some names of cheeses for that time
period and region, this gets into an ongoing discussion here about how
close a modern cheese, often named for a region, actually resembles the
cheese known by that name in period. Along those lines, perhaps this
file might be a good one to read:
