Personally, I prefer the flavour of bison (called buffalo in the US) 
over domestic beef. It's also leaner and is said to have a higher level 
of omega-3 fats if grass fed, rather than grain fed. Or so says a local 
bison rancher. If true, then it's not just 'fancy beef', but healthier 
for the higher price, as well as tasting better. At least for me.

Salmon costs more than beef, too, but then I like it more than beef, and 
it's healthier for me as well.

BTW, there is a European bison living in Poland and Russia, called a 
'wisent', with a much larger range in earlier times, including through 
the Middle Ages. The related bison living in the Caucasus went extinct 
finally in the 20th century.
