No, no potatoes. Just a soft wheat flour. This one I found from Frugal
Gourmet:
PLACE 1 cup water, 3 cups milk 1.5 teaspoons salt in a small saucepan &
bring to a gentle simmer.
ADD 1 cup semolina flour slowly, stirring all the while. Cook for
approximately 30 minutes stirring often 'til thickened. Remove from the
heat and STIR IN 2 Tablespoons butter, 2 egg yolks, and 1/4 cup {2 oz
measured} of grated parmesan cheese.
On a smooth countertop that is dampened with cold water, Pour the mixture
and spread it out to about a half inch thickness. Allow to cool completely,
then cut into desired shapes.
Lightly butter a baking dish {or dishes} and shingle the cut semolina in the
dish(es). Drizzle with a topping of 8 ounces butter, desired herbs, and
another half cup of Parmesan. Bake in a preheated 375F oven for 15 minutes,
or until the top begins to brown. Serves 8.
