[Sca-cooks] OT - recipe help - "atkins" scotch eggs

Pardon my being dense...but what is "chub breakfast sausage"?  I had thought to grind my own pork, season it and use that...then rolling them in soy flour...though I like the idea of giving it some body with the wheat bran.
