Sorry I know this is really late on Dec 8th....I just remembered ....


Date Pinwheel Cookies
2 ½ cups dates, cut inot small pieces
1 cup white sugar
1 cup water
Cook until thick and cool. Add 1 Cup nuts chopped.
1 cup shortening 4 cups flour
2 cups brown sugar ½ tsp salt
3 eggs, well beaten ½ tsp baking soda
Mix and divide into two parts. Roll out to ¼ " thickness on wax paper. Spread ½ of the date mixture on each roll. Roll as for jellie roll. Let cool in refridgerator. Slice ¼" thick. Bake at 375 degrees for 10 to 12 minutes.
