Sweet and Sour Stuffed Chicken

1 large roasting hen
2 1/2 tsp salt
3 T oil
1 lg onion, peeled and sliced thin
2 cloves garlic
1 c dried plums, chopped
1 apple, cored and chopped
1 c chopped dried apricots
1/2 c raisins
1.2 c walnuts
1 tsp cinnamon
1/4 tsp ground pepper
1/4 tsp saffron, dissolved in 1 c hot (pear) water
1 tsp sugar
1.2 c melted butter or olive oil

Soak chicken for at least 1 hour in salted water. Rinse, rub with 1/2 tsp
salt.

Heat 3 T oil in skillet, brown onions and garlic. Add plums, apple,
apricots, raisins, walnuts, 2 tsp salt, pepper, cinnamon, saffron water, and
sugar. Mix well.

Stuff chicken w/fruit mixture, and place in crockpot, with excess fruit
surrounding. Pour saffron water over.

Lid crockpot- cook until done.

Serve with plain rice or bread and salad and fresh herbs.

Does well with duck, game hens, or smaller frying chickens (two).
