Greetings
The danger zone for food is the long wait between 140-40 degrees so fast as
possible is best. Fridges are not the best item to use for lowering
temperatures of hot food. As they can take quite awhile to handle the
volume you putting in there.
One way this can done by placing the pot as in soup, or sauces, in a sink
full of ice. A cooler chest full of ice can do the same trick with any hot
pot.
Placing hot foods in a window to cool can have a problems due to flying
insects. Unless you cover them with a clean towel or you doing it during the
winter ( just saw that part).
Baggies full of ice hmm I be worried about leakage . Why not put the
bottles in the baggies?
