Of course a lot depends on the time period, but there are heaps of
period recipes that don't use garlic. It only shows up in 11 of the
nearly 500 recipes in "Two Fifteenth-Century Cookery Books" (2%), in 12
of the 286 recipes in "Forme of Cury" (4%), and doesn't show up at all
in any of the 50 recipes in "A Proper newe Booke of Cokerye".
In fact I think I've used garlic only once in the period recipes I've
tried out so far - but then I'm concentrating primarily on 14th and
15th century England. If you're looking for any particular type of
recipe let me know and I'll be happy to try and help search through the
sources I have.
