As far as a distinctive regional cuisine you almost
have to wait till the cookbooks of the 18 and 1900s to
find that.  The period cookbooks are very similar
across regions of Italy and in fact Europe.  However
there are a couple of period Italian books out there
which were written in Southern Italy.  These include

A good English translation, the original is given
(although not on the same page) along with a scholarly
discussion of the recipes and language style.  The
relationship of this manuscript to other “Martino”
manuscripts is given, along with a fairly
comprehensive bibliography.  This version of the
Martino cookbook is thought to be earlier than Libro
d’arte coquinario.

Two early 15th century recipe collections in a
southern Italian dialect, held by the University of
Stockholm.  Neither of these manuscripts have been
translated. 

If you want modern dishes try googling "puglia
recipes"
there are plenty of Italian sites.
