And it is a lot more palatable in my mind. I love beet greens and
hate the root. With the other evidence of similar recipes and the
later addition of spinach instead beet greens seems to substantiate
this.

Heh, I might just try this one.
And, from now on, all period recipes calling for beets will be a scribal
error actually meaning beet tops.  :-D
