I like Portobellos broiled, filled with scrambled eggs and sauced 
with Madeira demiglaze. Also good grilled very briefly on the gilled 
side, flipped over (depending on whether you're using a broiler or a 
real grill), topped with a slice of Stilton or Gorgonzola, which you 
then broil till melty and brown, then quarter and serve on top of a 
mixed salad (I usually use a mixture of watercress, Bibb lettuce and 
white endive, YMMV) tossed in a vinaigrette made with walnut oil and 
sherry vinegar. Then there's your classic Italian version, where you 
grill the mushrooms with just a smear of olive oil, then toss them, 
while still hot, in a balsamic and olive and/or nut oil vinaigrette, 
with chopped herbs. Rosemary, say. Garlic a nice addition but not 
essential.
