[Sca-cooks] Tomato Gravy Recipe

My Big Mama's Tomato Gravy
 
3 Tablespoons plain flour
3 Tablespoons oil or bacon drippings
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon sugar
1 pint diced tomatoes
tomato juice
 
In a large cast iron frying pan, stir flour and oil together over medium high heat until very smooth, and slightly golden brown.  Add salt, pepper, and sugar.  Slowly stir in tomatoes.  Continue to stir until smooth, adding tomato juice as necessary to form a thin gravy.
